If you know Geno Bahena, you know: He is a Rick Bayless protege. His restaurants twist tongues — Ixcapuzalco, Chilpancingo and now, in Logan Square, Real Tenochtitlan. And you know his mole. I suggest his chiles en nogada ($21), a fine example of his knack with regional dishes. Think Mexican flag — a green poblano chile (grilled) in white walnut sauce, topped with red pomegranate seeds.
