If you know Geno Bahena, you know: He is a Rick Bayless protege. His restaurants twist tongues — Ixcapuzalco, Chilpancingo and now, in Logan Square, Real Tenochtitlan. And you know his mole. The payoff is the pork stuffing, lightly fried, with candied heart of cactus. It’s seasonal but Bahena plans to keep it around. Real Tenochtitlan Restaurante, 2451 N. Milwaukee Ave.; 773-227-1050.
